汉源花椒
麻死人的花椒汉源产。汉源的牛市坡花椒古称“贡椒”,自唐代元和年间就被列为贡品。8月正是采椒季,整个汉源都弥漫着花椒的麻香味。川菜百味,“麻”字当头,正宗川味必麻。汉源百姓善用传统工艺炼花椒油,把将新鲜花椒中多种易挥发的芳香油转而浸存在菜籽油中,是川人凉菜和面食必备调味品。
